Menu Plan Monday 16th June 2014

So, last week we decided to forego meat.

It started off well enough… but a weekend trip to Blackpool kiboshed that whole idea!

  • Monday – Vegetarian Haggis, Sweet Potato Mash & Veg
  • Tuesday – Peanut Soy Tofu with Rice
  • Wednesday – Super Healthy Pasta
  • Thursday – Leftover Pasta (with cheese melted over the top… llarrrr!)
  • Friday –  Baked Tottie with Tuna & Salad
  • Saturday – BBQ Pulled Pork Burger with Chips, Onion Rings & Slaw (The Auctioneers, Blackpool)
  • Sunday – Chicken Tikka & Chips (Yates’s, Blackpool)

We did contemplate trying a Vegan meal plan (inspired by James Vs Burger #naemeatjune challenge), but it proved too difficult! Is there anything out there that doesn’t contain egg or dairy? I’d love some simple (and edible) suggestions from any vegans out there, if you please!

As you can see from this week’s meal plan, we can’t let go of our carnivorous ways, but we’re becoming more conscious of it at least… that’s the first step, right?

I took to Twitter to gush about how amazing the Linda McCartney vegetarian sausages are. I’ve been a bit squeamish and untrustworthy of late, when it comes to the contents of sausages, so I’m delighted to discover that I prefer these veggie versions to the “real” thing! This is a Big Deal for me.

I’m thinking Thursday’s soup will be my Easy Tomato Soup, since I have a few tins of tomato in the cupboard already. I could boil a wee pot of pasta and mix some soup through it for Friday’s lunch while I’m at it! And I’m really looking forward to revisiting the Balsamic Roast Beef on Sunday, yum!
